Do you ever find yourself with 3 huge bananas with tons of brown spots sitting on your counter? I do all the time. There are two things you can do with these ugly bananas. You could throw them in the trash (that is the option my kids would choose, they refuse to eat a banana with even one spot on it!) Or, you can take the spotty banana and turn it into a delicious muffin. My kids do not like to sit down for a big breakfast on school days. School days are so rushed, it is just a grab and go kind of scene around here. So, I like to bake some healthy “treats” on the weekend and then put them in the microwave for 30 seconds before we run out the door to school. Yummy, delicious and pretty nutritious breakfast to take with you. These muffins are vegan. They also have no added fat. These muffins are also an excellent after school snack. My daughter likes to smear on some peanut butter and it is filling her up until dinner. This is the perfect recipe to save the over ripe bananas on your counter! Bananas and chocolate chips are really the perfect flavor combo. I hope your family enjoys these as much as my family does!
Ingredients
- 4 medium size bananas mashed up well
- 1/2 cup brown sugar
- 1/2 cup applesauce
- 1 tsp cinnamon
- dash of salt
- 3/4 cup white flour
- 3/4 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup vegan chocolate chips
Instructions
- Mix up the first 4 ingredients very well. Slowly add in the dry ingredients. Stir in the chocolate chips at the end. Bake at 350 for 20-25 minutes. Enjoy!
