When spring comes, small white flowers begin to grow and get pollinated. Small olives grow and get bigger as summer arrives. In October, the olives are picked by a shaking machine, and then they are immediately taken to the mill. In the mill, they are quickly transformed to extra virgin olive oil. First, the olives are separated from the leaves. Then the olives are washed. The clean olives are crushed and formed into a paste. No heat or chemicals are used to press the olives. Ingredients

  • 16 ounces pasta
  • 1 pint cherry tomatoes cut in half
  • 1 cucumber, diced
  • 6 sundried tomatoes diced
  • 4 oz feta cheese, crumbled
  • 1 small red onion, diced
  • 1/4 cup shredded carrot
  • Vinaigrette ingredients:
  • 1/4 cup Extra Virgin Olive Oil, we love the Flavor Your Life brand
  • 3 tablespoons red wine vinegar
  • 2 lemons zest
  • 2 TB lemon juice
  • 2 tsp oregano
  • 1 TB honey
  • 5 minced garlic cloves
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/8 tsp red pepper flakes
  • 1/2 tsp italian seasoning

Instructions

  1. Bring a large pot of water to a rolling boil.
  2. Salt the water very generously.
  3. Cook your pasta until just al dente.
  4. While pasta cooks, whisk together your vinaigrette ingredients.
  5. Drain your pasta and rinse it in cold water for 30 seconds
  6. Transfer your pasta to a mixing bowl.
  7. Add to the pasta, your diced cucumber, carrots, tomatoes, sun dried tomatoes, feta cheese, and red onion. Drizzle the vinaigrette evenly onto the pasta and vegetables.  
  8. Toss it until all of your ingredients are evenly coated with the vinaigrette.
  9. Let cool in the refrigerator and then enjoy!
