The answer is yes! And wow, it is so delicious.

I rarely eat pasta anymore. My kids eat it at least a few times a week.  I have really taken pasta out of my diet because I do not see much value to a bowl of white pasta. It has tons of calories, lots of carbohydrates, and very little protein or vitamins.  These alternative pastas are really game changers. When you have pasta made from healthy ingredients you might start adding pasta back in to your diet.

I created a quick dinner last night with the Red Lentil Penne.  If you do not want to add in veggies or a sauce, you can boil the pasta in a gallon of water for 8-10 minutes and serve plain or with sauce and parmesan, or however you like to eat your pasta.  I skipped the boil the pasta in water step and it came out perfect.

Red Lentil Pasta with Vegetables~ One Pot Dinner

Ingredients

  • 4 oz organic red lentil penne by Tolerant Foods
  • 1 tsp EVOO
  • salt and pepper to taste
  • one can of crushed tomatoes
  • 10 mushrooms, peeled and diced
  • 1 small onion, diced
  • 1 small eggplant, peeled and diced
  • 1/2 cup frozen peas
  • 1 cup water
  • fresh grated parmesan to top each dish

Instructions

  1. Prepare your vegetables, dice them fairy small so they will cook quickly.
  2. Heat up your saute pan until very hot.
  3. Add a little bit of EVOO to your hot pan.
  4. Add your onion, eggplant and mushrooms and saute them for about 5-8 minutes.
  5. Sprinkle in some salt and pepper to taste.
  6. Pour in one can of diced tomatoes including the juices.
  7. Add in 1 cup of water.
  8. Pour in half of a box of Tolerant Pasta, give or take. You do not need to measure.
  9. The pasta should all be covered by the liquid from the tomatoes and the extra water you poured in. If the pasta is not covered with liquid add some more water.
  10. Cover your pan with a tight fitting lid and let boil for 5 minutes.
  11. Check your pasta and veggies, is there enough water for it to boil another 5-7 minutes? If not, add more water here, just a little at a time. Cover the pan again and let boil another 5 minutes.
  12. Taste a pasta, is it soft enough but not too mushy? If yes, your meal is done.
  13. Once you have determined your dinner is done, pour in 1/2 cup frozen peas. Stir them around for 1 minute, they just need to heat up a bit. Your sauce should be nice and thick and your pasta all cooked and ready to eat.
  14. Serve in a bowl with some fresh grated parmesan on top. Enjoy!
