Eggplant is one of my favorite ingredients. Eggplants are usually reasonably priced at the store and they are full of healthy nutrients. Eggplants have a neutral flavor so it is easy to flavor them with spices and other ingredients. Many people fry their eggplants, but I always bake them to make it healthier and more flavorful. Eggplants are high in antioxidants and may reduce the risk of heart disease if eaten along with a healthy diet. One cup of eggplant has the following nutritional values:

This eggplant dish is really easy to make and also quite healthy. Your first step is to slice your eggplant the long way. You can either use a really sharp knife or a mandoline slicer. After you have your eggplant sliced, dredge each piece in flour, then egg, then panko breadcrumbs. Cover the bottom of your pan with a generous amount of sauce.

Easy Eggplant Rollatini

Easy Eggplant Rollatini

Ingredients

  • 1 medium eggplant
  • 3 cups New Ragú Simply Pasta Sauce
  • 2 eggs
  • 1 1/2 cups seasoned breadcrumbs
  • 1/2 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 cup flour
  • 1/4 cup parmesan cheese
  • 1/8 cup milk
  • fresh basil, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp parsley
  • 1/4 tsp basil
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 350°F. Prepare a large baking sheet and set aside.
  2. Cut your eggplant lengthwise into 10 thin pieces. You can use a knife or a mandoline.
  3. Prepare three large bowls near your baking sheet.
  4. Add flour, salt, pepper, paprika and basil to one bowl.
  5. Add beaten eggs and milk in the second bowl
  6. Add breadcrumbs to the third bowl.
  7. Take each piece of eggplant and dip in first bowl to coat with flour.
  8. Shake lightly to remove excess flour.
  9. Then dip eggplant into egg mixture and coat it completely.
  10. Dip eggplant into breadcrumbs and place onto baking sheet.
  11. Repeat until all eggplant pieces are done.
  12. Bake the eggplant for 10-15 minutes.
  13. Then turn each piece over and bake an additional 10-15 minutes more.
  14. Remove from oven and allow to cool.
  15. In a small bowl combine ricotta cheese, parmesan, mozzarella, basil, parsley, salt, and pepper.
  16. Pour 1 cup of Ragu Simply marinara sauce into the bottom of a baking dish.
  17. Take one piece of eggplant at a time and spread on a medium layer of the ricotta filling.
  18. Roll the eggplant up and place seam side down into the sauce, in the baking dish.
  19. Repeat until all the eggplant slices are done.
  20. Top the eggplant rollatinis with more sauce and a little more mozzarella and or parmesan cheese.
  21. Bake uncovered for 25-30 minutes, until the cheese is light brown.
