Healthy Waffles
Do you need an easy breakfast that is full of flavor and protein? This is what we will be eating on our busy school mornings. We make a whole bunch of waffles on Sundays and then freeze them for the school week. This makes your morning rush a little easier by preparing breakfast for the week over the weekend.

These waffles are super easy to make. The base we used for these delicious waffles is the Kodiak Cakes protein packed flapjack and waffle mix. Kodiak Cakes is our favorite brand. They are expanding their line of products all the time. When we first started using the Kodiak Cakes brand they only had two pancake mixes. Now you can buy the delicious flapjack and waffle mixes at Target along with frozen premade waffles, baking mixes, and Kodiak Cups. I prefer to stock up on Amazon, where they sell buttermilk or dark chocolate mix, and a new flavor, strawberry chocolate chip! The strawberry chocolate chip is SO good!
Making the Rocky Road Waffles is really easy. Measure 1 cup of Kodiak Cakes chocolate flapjack mix into a bowl. Add in 1 cup of your favorite milk and 1 egg. Mix it up and you are ready to make pancakes or waffles. To make this batter into a rocky road waffle, simply add in chopped walnuts and mini marshmallows. Enjoy plain, or make an amazing dessert and top with Rocky Road ice cream and some whipped cream!
These waffles freeze perfectly. Store them in a ziplock freezer bag and pull them out one at a time as needed.

- Buttermilk
- Cinnamon Oat
- Dark Chocolate (this is what we used as the base for the rocky road waffles)
- Peanut Butter
- Almond Poppy Seed
- Chocolate Chip
- Buttermilk and Chia
- Pumpkin and Flax
- Whole Wheat, Oat, and Honey
- Buttermilk and Honey
- Gluten Free Oat
- NEW Strawberry Chocolate Chip!
Which flavor would you want to try first? I need to try the Peanut Butter ones next. A little peanut butter cup waffle with some chocolate chips inside? Yum!
Ingredients
- 1 cup Kodiak Cakes Dark Chocolate Waffle Mix
- 1 cup milk
- 1 egg
- 1/4 cup chopped walnuts
- 1/2 cup mini marshmallow
Instructions
- In a bowl combine mix, milk and egg.
- Pour mix into waffle machine and sprinkle in some walnuts and mini marshmallows.
- Add a little more batter on top to cover your walnuts and marshmallows.
- Bake as directed on your waffle machine, or turn into delicious pancakes! Enjoy!

Yes! My costco sometimes carries the kodiak cakes waflle mix too! I would love to get a really huge box so I can make a whole bunch this weekend.

Wow, these look really good. I’ve always liked to cook on the weekends so I can have things to eat during the week. It takes time cooking every day! These waffles look amazing.

Those waffles look so hearty and full of whole grains and flavor. I never made waffles at home but this seems like such a great idea and the mixes look so good.
Waffles are not too hard to make at home. You just need a small waffle maker and it is just like making pancakes but more fun!
All this needs is some ice cream. I just totally took all the healthy out of it didn’t I? These waffles look so good I wish I had a plate of them right now.
We actually did eat a few with rocky road ice cream and while it was no longer healthy, it was a delicious dessert!
I will give these a try for sure. I’ve seen the boxes in the grocery store and was curious if they were good. We love to have waffles now and again!

What?! SO many great flavors… I’ve made a couple from scratch before and it’s always a lot of work. This would be so helpful and my kids would love it!!

Waffle makers are so inexpensive and they make breakfast so much more fun! The syrup slides into each of the crannies, it is awesome!
Those waffles make it so that I could eat them again! I love that they look every bit as wonderful as “regular” waffles.
