Salad with tofu
Who loves a quick lunch or dinner that can be ready in less than 5 minutes? I do! As soon as the weather gets hot, this Mama wants to spend less time in the kitchen. Plant-based meals are easy and delicious
It is so easy to make this salad with tofu. Collect your favorite salad ingredients. We put in mixed greens with carrots, cucumber, mini peppers, and avocado. Then whisk the simple vinaigrette. Fry up some tofu squares and top with chopped cashews and some scallions. This meal can be ready in about 5 minutes.
Toss your favorite salad ingredients into a bowl. A bag of pre-shredded carrots saves time when you are making a few salads during the week.
Sauté your tofu cubes in a little bit of olive oil. It only takes about 5 minutes to get all the sides nice and brown. Turn them over as they start to brown.
Add your mini peppers, sliced avocado, and tofu cubes. Add on a store-bought dressing or make the quick vinaigrette in the recipe card. Enjoy this super healthy and totally delicious salad with tofu. You can find all of these delicious tofu products at your local Wegmans.
- 1 package of Nasoya baked tofu
- bag of mixed green
- shredded carrots
- cucumbers, diced small
- mini peppers, thinly sliced
- avocado, thinly sliced
- olive oil about 1 Tablespoon
- 3 Tablespoons soy sauce
- 1/4 cup cashews
- 1/4 cup water
- 3 Tablespoons sesame seeds
- 2 Tablespoons olive oil
- 2 teaspoons sugar
- 3 teaspoons rice wine vinegar
- 1 tsp salt
- Place your mixed greens in a bowl.
- Add in shredded carrots, diced cucumbers and sliced mini peppers.
- Toast your sesame seeds in a small pan. Watch them carefully so they do not burn.
- Make your vinaigrette in a bowl.
- Whisk together soy sauce, water, olive oil, sugar, salt, and rice wine vinegar.
- Add in your toasted sesame seeds and cashews.
- Fry your diced tofu pieces in a little olive oil. Make sure all the sides get nice and crispy.
- Add your avocado and tofu pieces to your salad.
- Pour on your vinaigrette and enjoy!
